If sahih bukhari is authentic, why are some parts accepted and some parts aren't?

It even says in the book that he didn't included ahadeeth that weren't authentic, that he didn't validate himself. So where does this cherry picking come from? Why follow some ahadeeth and not follow others if the book is authentic?
